Chandrakala | Gol Gujiya


Chandrakala is a royal Indian sweet and is very tempting. It is quite like our humble Gujiya but very rich in looks and taste. It is round and dipped in sugar syrup which makes the mawa filling moist and juicy. In most parts it is also known as Suryakala and Gol Gujiya. Give it a try this festive season and enjoy the sweetness 😊







Ingredients-
Maida - 200 gm / 2 cup
Ghee - 50 gm / 1/2 cup
Water – to knead the dough
Almond (sliced) -6-7
Cashew Nuts (halves) -6-7
Pista (chopped) -6-7
Raisins -8-10
Sugar -2 cup
Mawa/Khoya -200gm
Green Cardamom powder-2 tbsp
Water – for sugar syrup
Lemon juice -3-4 drops
Kesar -few strands
Oil for frying

Making Chandrakala/Gol Gujiya –
1-   In a non-stick pan fry khoya till light golden in color. Keep stirring continuously to ensure it is roasted evenly.
2-   Once the khoya turns light golden add sugar, green cardamom powder and all the chopped dry fruits. Mix it well and let the mawa cool down completely.
3-   In a large bowl take maida and add ghee to it; and mix all together by rubbing hands.
4-   Make a semi soft dough by adding water, cover & keep aside for 10-15 min. to rest.
5-   Before making poori, knead the dough again for few seconds for more smoothness.
6-   Divide dough in 4-5 portion. Take one portion and make a big thin chapati of it. Cut into round shape with a cookie cutter or a small bowl.
7-   Take one poori and put 1 tbsp mawa mix in the center. Apply water-maida paste to the edges. Now take another poori and cover the 1st poori, seal the edges by pressing with the fingers and then fold edges to make design.
8-   Now deep fry all Chandrakala on low-medium flame till light golden.
9-   For sugar syrup put all ingredients into a pan & cook at low flame.  Add cardamom powder, kesar and lemon juice to the syrup. The sugar syrup should have honey like consistency.
10-  When the Chandrakala is completely cool, prick it with fork and dip in the sugar syrup.
11- Take them out after 30 minutes. Garnish with chopped nuts and kesar.
12-  Beautiful and taste Chandrakala/Gol gujiya is ready.
