Pudina Laccha Paratha | Crispy layered paratha | Pheni paratha | Indian layered flatbread


Laccha paratha as the name says multi-layered paratha made with wheat flour/all-purpose flour. This paratha is of medium thickness and takes bit time to get completely cooked. Laccha paratha goes very well with any curry or vegetable of your choice. Lachha parathas are very much like Kerala Parotta with the only difference of flour, Kerala Parotta is made using Maida (all purpose flour) whereas we can make laccha paratha with wheat flour. There is also hint of sugar in the Kerala Parotta which we generally don’t add in laccha paratha.





Ingredients –
Wheat flour (gehu ka aata) -2 cup
Salt – as per taste
Carom seeds (Ajwain) – 1 tsp
Refined oil (for dough)- 2 tbsp
Milk -1/4 cup
Water for kneading -as required
Dry pudina powder -1tbsp
Kasoori Methi -1tbsp
Ghee -2tbsp
Refined oil- for paratha

Making Paratha -
1-In a large bowl take wheat flour, and add salt, ajwain, milk, oil. Mix all the ingredients in flour very well. Now add water and knead a soft dough, same as for chapati.
2-Drizzle some oil on aata and cover it with damp cotton cloth for 15 minutes.
3-After 15 minutes, knead the dough again and make small round balls out of the dough. Laccha paratha is thick so the roundels will be bigger than the chapati.
4-Take one roundel and make a big thin chapati, drizzle some ghee on the roti and evenly spread some flour over it.
5-Now from one side start folding it up and down (shape of fan). Once the fan is made apply some ghee over it and gently try to stretch it.
6-Take one edge and start rolling to make a roundel again. Using the same process make the other roundels also. Let it sit for 10 min.
7-Finally take one roundel and gently spread it in a shape of roti using your hand (do not use the belan/rolling pin as it might stick the layers).
8-Wet you palms and pat the upper surface of roti to make it little wet, sprinkle some dry pudina and kasoori methi to it. Gently pat it to get the pudina and methi stick on chapati.
9-Heat a tawa and roast the paratha. Apply ghee and roast it properly, cooking laccha paratha takes time as it is thick and has layers.
10-Tasty laccha parathas are ready to be served!
