Corn fritters or Corn patties are having the perfect crunch and sweetness of sweet corn. This recipe can be easily altered; veg lovers can follow the recipe as is and if you love eggs, just replace the flour with all-purpose flour and eggs. The crunchy fritters will be ready as per your taste. Serve along with a side salad or the yoghurt dip for the perfect light evening snack.




Ingredients –
Boiled Corn kernels -1 cup (250 gm)
Rice Flour -3tbsp
Corn Flour -1tbsp
Grated ginger -1tsp
Onion (finely chopped) -1 medium
Chopped Coriander leaves –2 tsp
Red chili flakes -1tsp
Carrots grated -2tbsp
Salt -as per taste
Black pepper -1tsp
Milk -1/2 cup
Red chili powder-1/2 tsp (as per taste)

Method-
Blend half of the boiled corn to a rough paste.
 In a bowl add the boiled corn kernels and the paste, along with all the other ingredients (except milk)
 Mix everything well.
Add some milk to get the smooth paste consistency and combine everything together
The corn fritter mixture is ready. Heat a pan with some oil.
Scoop some mixture and drop it onto the pan, press it in a shape of patty.
Flip the corn fritter and cook evenly on both sides.
 Remove it from the pan and serve it hot.

Preparing a dip-
Whisk 3tbsp of curd to a smooth texture. Add chili flakes and coriander leaves to it. Mix well. (Adding salt is optional)
